Sausage & Potato Cassoulet
This one-pot meal has become a beloved favorite among our family and friends. Using simple, high quality ingredients you'll have a hearty meal in less than an hour that's delicious any time of year.

Ingredients

  • (1 lb) Ground Garlic Sausage
  • (1) medium onion, diced
  • (3-4) large carrots, peeled & diced
  • (4-5) white potatoes, diced into 1/2 inch pieces
  • (1) can white beans (cannellini are my go-to)
  • (1) can diced tomatoes
  • (1 tbsp) Worcestershire sauce
  • (1 cup) chicken broth
  • salt and pepper

Directions

Brown sausage in Dutch oven or large heavy pot. Add onion and cook until translucent. Add carrots, potatoes, beans, tomatoes, Worcestershire, broth and salt and pepper. Mix well. Bring to a boil then turn down to a simmer. Simmer for 30 minutes or until potatoes and carrots are tender.


Variations:

-You can use different sausage favors, but our garlic sausage is our absolute favorite for this recipe. Breakfast sausage is runner up.

-If you choose to use plain ground pork, I highly recommend adding fresh or powdered garlic plus a few other basic seasonings.

-I have made this recipe without chicken broth if I don't have any on hand. In such a case be sure to add all the juices from the canned tomatoes and beans, and a little water if necessary to get that slightly soup-y consistency.
